Traditional Greek Pasta
我比较喜欢五颜六色的pasta,所以那天就买了这包三色pasta,
包括:tomato/capsicum pasta,spinach pasta 和普通pasta。
Traditional Greek Pasta Sauce
1 bouquet garni
5 bay leaves
3 garlic cloves
1 teaspoon dried oregano
1 teaspoon paprika
3 tablespoons fresh, chopped basil
1 white onion, chopped
2 standard cups of red wine (shiraz/cab.sav.)
2 teaspoons sugar
1 pack premium beef mince
2 cans diced roma tomatoes
Tomato paste
Kalamata olive oil
Sea salt and ground black pepper for seasoning
1. Brown chopped onion with olive oil in a large pot.
2. Add garlic cloves and beef mince. Sprinkle on oregano and paprika. Cook thoroughly. Note aromatic fragrance.
3. Add diced tomatoes and stir content to mix. Add bay leaves and bouquet garni. Add salt and pepper. Continue to cook with medium heat over 20-30 minutes. Bring to slightly boil. Add generous amount of tomato paste (enough to thicken mixture and for colour).
4. Turn heat down to low, add wine & basil and simmer over another hour and a half or so.
