Apple & almond moist cake


Alex 跟爸爸妈妈一样,
不喜欢icing,不喜欢cream,
也不喜欢蛋糕上有太多花饰。
所以我做的蛋糕往往都是普普通通样子的,呵呵~
最后我还是把食谱放上来,只想存在这本厨房日记里,


将来跟Alex 一起追逐甜蜜过去~

Ingredients (serves 10)

Melted butter, to grease
180g butter, at room temperature
2/3 cup caster sugar
1 tsp vanilla essence
3 eggs, at room temperature
1 cup almond meal
1 cup self-raising flour
1/3 cup milk
5 Royal Gala apples, quartered, cored, thinly sliced


Method

1. Preheat oven to 170°C.
2. Brush cake pan with melted butter to grease. Line base with baking paper.
3. Beat the butter, sugar and vanilla in a bowl. Add the eggs, 1 at a time.
4. Melt 3 apples slices in a lightly greased pan. Add to mixture.
5. Stir in the almond meal. Add half the flour and half the milk.
Stir until well combined. Repeat with remaining flour and milk.

**Options: Arrange the remaining 2 apple, slightly overlapping, over the base of the prepared pan. Spoon the mixture into the pan and smooth the surface.

6. Bake for 35 minutes. Set aside for 10 minutes to cool.

Hi Sonia! Yes! Carrot cake is my favourite too! And thats the first cake I baked for Alex~ You have to add walnut to make it nicer too! I can pass the recipe if you like
