这不是最好最好的Carrot cake 食谱,
但它肯定是最简单、最省时间的食谱(最适合我这个大忙人了~ 呵呵~),

Ingredients (12)
Olive oil, to grease
2 carrots
1 cup self-raising flour
1/2 cup plain flour
1 tsp bicarbonate of soda
1/2 tsp ground cinnamon
1/2 cup brown sugar
1/2 cup castor sugar (as replacement to 1/2 cup syrup/honey)
3/4 cup rice bran oil (other option: 3/4 cup olive oil, a little expensive though)
3 medium free range eggs
1 tsp vanilla essence
Icing (**optional)
(We are kind of watching our weight lately so I decided to skip this part, but a creamy layer of icing with a hint of lemon is definitely a great idea!)
250g spreadable cream cheese
1/2 cup icing sugar
1/2 tsp vanilla essence
1/2 lemon, juice extracted
Method
1 Preheat oven to 170°C. Grease a round cake pan with olive oil and line with baking paper.
2 Peel and grate the carrots, and set aside.
4 Put the sugars, rice bran oil, eggs and vanilla in a separate bowl. Mix until combined.
5 Pour the oil mixture into the dry ingredients.
6 Stir gently until just combined.
7 Stir in the grated carrot.
... and mix well!
8 Pour the mixture into the pan and bake for 1 hour.
9 Set aside for 5 minutes, before turning out onto a wire rack to cool completely.
**To make the icing, place the cream cheese, icing sugar and vanilla in a bowl. Mix until well combined. Spread the icing over the cake.

just went thru the recipe. could you advise me the weight of the grated carrot? you mentioned 2 carrots, but carrot come with difference sizes, if you can give me weight, then it would be perfect.
by the way, thought carrot cake with walnut is the best, actually I had bought walnut and just wait for your recipe, so if i want to add in walnut, how much should i add in?
one more, i dont have bicarbonate of soda in my kitchen, can i use baking powder instead?

Hi Sonia! I used 2 big carrots which is equivalent to 300g... =D
Carrot cake goes very well with walnut (I included walnut in my first carrot cake), the amount depends on your likings, I added in after I stirred in the grated carrots, about 50g I used cause Alex is just so so with walnut...
I am sure baking powder will do the same magic! They are mainly for puffing up the cake... about the same amount will do... =D
