苹果派 / 苹果馅饼


超市里常常都会看到苹果派,
有时候也会买回家配雪糕吃,
自己家做的苹果派还是第一次做呢!
这次做了两个,一个给了男友爸爸~
另一个当然归我们两口儿咯!呵呵~

材料(8人份):

1 3/4 cups plain flour
1/2 cup self-raising flour
185g unsalted butter, chilled, cut into small pieces
1/3 cup caster sugar
2 eggs
1 tbs milk


馅料:

8 large Granny Smith apples
Juice of 1 lemon
45g unsalted butter
1/2 cup caster sugar
1 tsp ground cinnamon
1/4 tsp ground cloves



我家的男人很顽皮的,但又很可爱呢~


1. Sift flours and a pinch of salt into a large mixing bowl. Add butter and rub into flour, then stir through sugar. Lightly beat 1 egg with 1 tbsp chilled water, then drizzle over flour mixture. Mix well to form dough. Divide dough into two pieces, one slightly larger than the other. Wrap in plastic wrap, and chill for 30 minutes.

2. Peel and core the apples, and cut each into 8 pieces. Toss immediately with lemon juice. Melt butter and sugar over medium-low heat, then add apples and spices, stir to coat. Cook until apples have softened. Set aside to cool.

3. Roll out the larger pastry ball on a floured workbench. Gently press into metal pie dish corners and allow excess to overhang. Place filling in base. Roll the small pastry piece. Beat remaining egg with milk, brushing some on rim of the base. Top with small pastry.
(这个步骤看个人咯!我本身把面粉给切成一条条,再铺到馅料上)

4. Cut excess pastry from edges. Crimp edges together with fingers. Chill for 30 minutes. Preheat oven to 180°C, place pie dish on a baking tray. Brush top of pie with more beaten egg. Cut four small air vents in the centre of the pie and bake for 45 minutes.

Thanks for this great recipe, I thinking to bake this one long time ago but till now have yet to try out, I think with this great recipe, am sure will try to bake soon.

Mia, by the way, can I use salted butter? I try not to buy unsalted butter which I seldom use it..

salted butter is fine Sonia~ it adds flavour to the dough but might turn out to be slightly harder though...

It is great with ice cream, isn't it? I like it with either some ice cream or custard~ yum!
